sweet potato dip

this stuff lasts for at least 2 weeks in the fridge and freezes well. it’s bright orange.

1 cup mashed sweet potato
1 can great northern beans, drained
1 tbsp sun dried tomatoes (~15 grams)
1/4 cup roasted red bell peppers (as much as you can fit in a 1/4 cup measure)
juice of 1 lemon
1/2 tsp salt
1 tsp chipotle pepper powder
1/2 tsp onion powder
1/2 tsp garlic (remove this if your roasted red peppers already have garlic in the jar)
1/4 tsp cumin
1/2 tsp paprika
1 tbsp red wine vinegar
2 tbsp olive oil (i use the half plain olive oil and half olive oil in the red pepper jar)

 

add everything to a blender and puree until smooth.
